Our Story

racks-of-croissant-smCorinna’s Comestibles is a small, local bakery in New York’s Hudson Valley region (just west of Great Barrington, MA and about 40 minutes east-south-east of Albany). We produce a range of high quality, handmade, organic or natural baked goods and sell them in local shops and cooperative markets. We deliver as far north and west as Albany, as far south as Kingston; as far east as Great Barrington.

Our main products are croissants, bear-claws, puff pastries, and luxury cakes. Our main market is local restaurants, markets and co-ops. Our croissants are sold plain, or dusted with powdered sugar, or filled with chocolate or with almonds and almond cream. We are also introducing a savory croissant line, stuffed with ham and cheese, spinach and other savory treats.

All our ingredients are sourced locally, and we use local producers’ goods wherever possible, including produce and wonderful dairy products from Hawthorne Valley Farm and fruits from Threshold Farm. We provide organic baked goods for some stores, and always use the highest quality ingredients -  we never use bleached flour, preservatives, artificial flavors, colors or preservatives.

Corinna Selby, our Executive Pastry Chef, has been baking professionally for several years and is a graduate of Cambridge School for Culinary Arts in Cambridge, MA. Corinna was born and raised in Munich, Germany.
